Silverton is no stranger to life-changing advice. In 2023, Los Angeles-born chef writes cookbook The cookie that changed my life, Now she says there are two things in the kitchen that she considers “life-changing.” The first is the microplane.

She explains, “What I like about it is that it doesn’t plug in. I’m not a fan of any type of kitchen gadget that plugs in, so this is right in my wheelhouse.”

“I love that the holes have so many configurations now. So there’s a small, medium and large that all have their own places. There are also ribbons and slashes. I probably have six microplanes of each type and I’m always Keep looking for a better handle and better weight for them, but they’re all great, I use them for anything from zesting cheese to mincing garlic, I love it all!” She says.

The Osteria Mozza chef also revealed his long-time love of the mortar and pestle, which dates back to his culinary school days at Le Cordon Bleu in London.

“It’s a ceramic mortar and pestle. I love making things in a mortar and pestle. I use them to make all my crushed sauces, like pestos and nut-based sauces, from making green sauces to making heavy bowls of that mortar. “With a whisk to make any type of emulsified dressing or mayonnaise-based dressing,” she explains.

Chefs say that heavy ceramic mortars are actually more ideal for mixing dressings because lighter mixing bowls tend to “flop around on the counter” if not secured properly. Silverton is a fan of the brand’s pizza steels as well as their cooking pans.

Since Silverton is “not a big fan” of things that have a plug, when asked what her favorite kitchen gadget is, she laughs and says, “Electric can opener. Are they Do you still do this?”
